Mondo by Isaac Cantalapiedra is a 100% Verdejo, a structured Orange Wine, complex and with great longevity. Designed by Manuel, Isaac's son, with the intention of trying and experimenting with new winemaking techniques, trying to intervene as little as possible in the cellar. In this case we are talking about spontaneous fermentation in open vats with approximately 30 days of contact between the must and the skins and then refinement for 11 months in exhausted oak barrels. No clarification and no filtration. “Mondo” by Isaac and Manuel Cantalapiedra is an Orange Wine with a strong personality, on the nose it recalls hints of dried fruit, honey and apricot, ripe apple and pear. On the palate it is fresh with a very important saline note, with excellent body and great complexity.
